Serene Lakes Cooking Club

(Meeting Minutes 6/22/03)

The SLCC has grown since we first held our first meeting in May. Our club should be changed to the SLCC and their friends/admirers. May and June was a big vacation season for many Serenenites. So, many who wished to attend couldn't, but insisted on being on our distribution e-mail list to receive news, tips/tricks, as well as the fabulous member recipes. As many of you know, thanks to Stephen Evans we also have a navigation link on the www.slpoa.com website which will take you directly to our library of SLCC information (e.g., minutes, recipes, etc.).

The June 22, 2003 cooking club meeting was a success, thanks to Jennifer Montgomery's hospitality and her excellent culinary recipes/secrets for quick and tasty appetizers. She created 4-dishes: 2 types of 5-spice chicken, a curried baked brie, Queso with chorizo, and a fabulous stuffed mushroom. These recipes will be posted in the SLPOA SLCC in the very near future.

In addition, at the request of some folks who missed the Peking Duck demo in May, I redid the demonstration.

The next SLCC meeting will be next month. Joni Kaufman will be hosting this event. I've been told she'll be doing a demo on an "industrial equipped kitchen."

Also, there seems to be real interest in a demo for boning a whole chicken, and restuffing it to form the original chicken shape. In other words, make it look like a chicken, but can be served like a meatloaf, NO BONES in the main cavity. I can do this demo at Joni's at the end of her demo.

Again, thanks Jennifer for a fabulous demonstration, and most of all for the wonderful tasty treats.

P.S. Tips/Tricks has become a very popular addition. If you have some tips/tricks to share. Please send them to me, so I can share it with our club members.

Also, there seems to be some interest in doing a SLCC summer potluck at our beach. We can discuss this at our next meeting.
