What do I do with white Wonder Bread?

Yes, those nasty things that kids love to have around the house. As Ripley would say, believe it or not, it makes a wonderful wrapper for e.g., crab rolls. Simply cut the crust off, and then roll out the bread as thin as possible. If you hate rolling, use a pasta machine set at the thinnest possible setting. Put a filling (e.g., crab filling) from end-to-end, and than roll it up and wash it with a white wash (egg white with water) to glue the bread. You do not need to worry about the crab filling leaking out at the ends, since the crab filling should have been made with a binding agent e.g., eggs.

 

Emergency appetizers for those cocktail hours.

Serene Lakes people are known for their hospitality. When people do their walks, it’s common for impromptu invites for "pu-pus" and libations. And, let’s face it; potato chips and dips or honey-roasted peanuts are BORRRriiiinnnnggg!

My quick solution is to always have lavash available. You can freeze them. When I purchase the lavash, I separate the sheets with plastic wrap and then place them in the freezer. When unexpected guests come, I quickly loosen one frozen lavash and defrost a sheet in the microwave. Create a filling with mayonnaise (which everyone should have in their fridge) and, if you have cream cheese, or sour cream fold equal parts to make a smooth dip. Simply fold in whatever you fancy: Vegetables, lox, etc., etc., add your favorite spices too (e.g., cayenne). The more color you add, the prettier the "cookies" will look. You can use the following vegetables to add color: lettuce, red bell peppers, cucumbers etc. Spread the filling on the lavash, leaving about ½ inch border around the lavash. Roll the lavash, and cut into cute little cookie size appetizers. This takes about 15-20 minutes to put together.

Also, a box of cream cheese is very handy; simply place the cream cheese on a pretty serving platter. Spoon some interesting jam, such as jalapeno jam, mint jam or whatever’s available in your pantry. Serve with crackers.

Emergency appetizers are endless; all you have to do is look in your fridge or pantry.
