Tips/Tricks:- Miso

Question?     I have Miso paste and have used it for Miso soup.   I understand that there are other uses for Miso.   What is it made from?, and what are some other uses?

Answer.   It was introduced to the Japanese from China and is basically a fermented soybean paste.   There are 3-basic types of Miso:

  • Mame Miso – most common is made solely of soy beans.
  • Kome Miso – contains rice
  • Mugi Miso – contains barley
Miso has many flavorful uses.    It can be used as a baste for fish, meats, and or vegetables.   And, it can also be used as a dressing, e.g., Miso-sesame dressing for vegetables.

For broiled meats and fish, simply slather the meat/fish with Miso.   For a sweeter and more caramelized meat/fish, add a touch a sugar to the Miso paste.

For dressings, simply whisk the following together:

  • ¼ cup miso
  • 1 tbsp. mirin (Japanese sweet rice wine for cooking)
  • 1 tbsp. water or dashi
  • 4 ½ tsp sugar
Toss over various cooked (steamed) vegetables).   For added flavor, sprinkle toasted sesame seeds.
