Mushrooms, Avocadoes, Soy Sauce

Prepping mushrooms: Mushrooms absorb a lot of water; hence, can lose a lot of its flavor by over cleaning them in water. The trick is, instead of washing mushrooms, brush them clean with a good soft vegetable brush. They actually have brushes specifically made for mushrooms.

Sautéing Mushrooms: Mushrooms and hazelnuts have a special affinity for one another, so try sautéing mushrooms in hazelnut oil instead of butter or olive oil.

Prepping avocadoes: You'll get added flavor as well as protection from discoloration if you sprinkle avocado with lime juice instead of lemon juice.

Soy Sauce: Use light (slightly sweeter) soy sauce for marinades; use dark (slightly heavier) soy sauce for cooking and sauces.
