Quick and Easy fruit parfait

With summer quickly approaching, here’s a quick and easy way to make a delicious dessert using egg whites and berries. 

5-egg whites  
1-cup small berries (raspberries, blueberries, blackberries, etc.) cleaned and dried well  
¾ - 1 cup sugar (depending on how sweet you like it) You can even use splenda if you are on a sugar free diet.  
Pinch of salt  
Pinch of cream of tartar  
1- tsp extract, you can use vanilla or lemon.   
Chopped nuts to sprinkle on top (optional)

You need to use a mixer, because the egg whites must be beaten until very, very stiff.  Make sure the mixer bowl and beater is very clean and dry.  Place the egg whites, cream of tartar and salt into the bowl and begin mixing on low, progressively increasing to the highest speed.  Don’t be afraid to over beat it.  This should take about 5-minutes.    Once the egg whites achieve its consistency of being very stiff, fold in the fruit and extract at high speed.  Once the berries have been incorporated, transfer the mixture into individual serving bowls, cups, or if you want to be fancy, martini glasses.  Refrigerate for a minimum of 8-hours.  Before serving, sprinkle with chopped nuts (optional)

This is a very light and refreshing dessert.
