Moody’s Bistro Recipes
White Gazpacho

serves four

Ingredients Weight
Bread (artisan) 5 slices (¼ #)
Water 2 c
Almonds Toasted ½ c
Pine nuts Toasted ½ c
Garlic 1 clove
Cucumber seedless 1 ea
Grapes 1 #
Extra Virgin Olive Oil 4 oz
White vinegar 2 T
Sherry vinegar 1 T
Kosher salt tt
White pepper tt

Procedures

Soak the bread in the water for 10 minutes. Place nuts and garlic in blender. Pulse. Add grapes and cucumber. Pulse. Squeeze bread and add to blender. Add vinegars, oil and water. Season and check consistency. Add water if needed.

Garnish with toasted almonds, bruniose cucumber and oil.
