CHILI CHEESE TRIANGLES
(Recipe by Brenda Suter)
1cup flour
½ cup yellow cornmeal
½ teaspoon chili powder
¼ cup butter, melted
¼ cup milk
1 large egg
1 ½ cups shredded sharp cheddar cheese
1 4oz. can chopped green chilies
¼ cup green onion, finely chopped
Mix flour, corn meal and chili powder. Add butter, milk and
egg. Stir just until moistened. Press mixture in an even layer in a buttered
9-inch square pan. Bake at 350 for about 25 minutes until it pulls away from the
edges and is slightly brown.
Mix cheese, chilies and onion. Spread on crust and either
bake until cheese melts or put under broiler for a few minutes. Cut into
rectangles and then cut each rectangle on the diagonal. A pizza cutter works
well.
